This is one hell of an inspiring video! But look closely and you'll notice that she is doing something very interesting but nothing unique. When she hears or sings a note she doesn't think she does just does. In other words her mind is open and not questioning, she accepts and trusts that her mind recognizes the pitch she must guess or sing.
When you learn to trust your ear you will gain the ability to notate anything, at any time and where ever you are.
Still, is bloody impressive! Enjoy.........
